  • Buy the large globe eggplant
  • In an oven turn on the broiler
  • Put the eggplant in the second highest rack and broil it into charred
  • Put the eggplant in a bowl with a strainer underneath and poke holes in it. Let the liquid drain out.
  • If the eggplant is fresh, the juices will not be bitter
  • Blend with peanut butter (or tahini), olive oil, salt, and lemon juice.
