- Buy the large globe eggplant
- In an oven turn on the broiler
- Put the eggplant in the second highest rack and broil it into charred
- Put the eggplant in a bowl with a strainer underneath and poke holes in it. Let the liquid drain out.
- If the eggplant is fresh, the juices will not be bitter
- Blend with peanut butter (or tahini), olive oil, salt, and lemon juice.
