Vietnamese Pickles (Đồ Chua)

Đồ Chua (literally translates to sour stuff), are carrots and daikon soaked in a vinegar brine solution. The pickles are used for rice noodle and spring roll dishes.


  • 2 small daikons
  • 2 carrots
  • 1 cup of sugar
  • 1 cup of vinegar
  • 1/8 cup of salt
  • 3 cups of water


  • Peel daikon and carrots
  • Cut daikon and carrots diagonally into small slice
  • Cut the slices into small strips
  • Bring the water up to a boil
  • Put the sugar, vinegar, and salt in a bowl and pour over hot water
  • Let the mixture cool then add the strips of daikon and carrots
  • Let soak for at least 20 minutes
  • You can store it in the fridge in a jar for a couple weeks.


1 part sugar : 1 part vinegar : 3 parts water: .10 parts salt
